How to make it

  • Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
  • Mix cereal and milk together in a medium sized mixing bowl.
  • Let mixture sit for 3 to 15 minutes.
  • Stir in the applesauce (see Fat Free Baking Mix recipe) and all liquid ingredients.
  • Fold in the dry ingredients, one at a time.
  • Divide batter evenly among muffin cups.
  • Bake 16 to 19 minutes or until toothpick inserted in center comes out clean. Remove from pan immediately.
  • If you count calories - 188 cals and if you count WW pts - 3 pts per muffin.

    Yes they are moist, but if you want a little more moisture or if they seem a little too rich then reduce the cocoa powder to 3/4 cup.
