Ricotta Puffs

- 8 ounces ricotta cheese (about 1 cup) shopping list
- 3 eggs shopping list
- 1/4 cup granulated sugar shopping list
- 1 cup all-purpose flour shopping list
- 4 teaspoons baking powder shopping list
- 1/4 teaspoon salt, optional shopping list
- oil for frying shopping list
- powdered sugar shopping list
How to make it
- In a large bowl, combine ricotta, eggs and sugar. Blend smooth.
- In another bowl, stir together flour, baking powder and salt.
- Add dry ingredients to wet, beating until the batter is smooth.
- Pour oil into a deep pan to a depth of about 1 1/2 inches. Heat to 360-degrees F.
- For each puff, drop a rounded teaspoon of batter into the oil.
- Cook several puffs at a time, but do not crowd the pan.
- Cook, turning occasionally, until golden brown, about 1 1/2 minutes.
- Adjust the heat as needed to maintain the oil temp at 360.
- Lift out cooked puffs with a slotted spoon.
- Drain well on paper towels or brown paper.
- If made ahead, let cool, then wrap airtight and refrigerate.
- To reheat, arrange puffs in a single layer on a rimmed baking sheet.
- Place in a 350-degree F oven until heated through (about 10 minutes).
- Dust with powdered sugar and serve warm.
- Per puff: 48 calories, .74 grams protein, 5 grams carbohydrate, 3 grams total fat, 20 milligrams cholesterol, 59 milligrams sodium.
