Toasted Pita Bread Salad

This salad is wonderfully crunchy and flavorful
Ingredients
- Dresssing: shopping list
- 1/4 cup olive oil shopping list
- 1 1/2 tbsp lemon juice shopping list
- Salt & pepper shopping list
- 2 cups Romaine cut in 1 1/2" strips shopping list
- 2 - 6" pita bread, lightly toasted shopping list
- 1 large tomatoe, cut in 1/2" cubes shopping list
- 1 small cuke, cut in 1/2" cubes shopping list
- 1/4 cup diced onion shopping list
- 1/4 cup finely chopped green onion shopping list
- 1/4 cup chopped fresh mint shopping list
- 2 tbsp chopped parsley shopping list
How to make it
- Mix all dressing ingredients in a small bowl.
- Put lettuce in a medium bowl, add remaining ingredients except pita bread. Add dressing to salad. Tear pita into 2" pieces and mix into salad.
