How to make it

  • Preheat oven to 400
  • Boil sweet potatoes until tender
  • Peel and mash potatoes
  • Add egg yolks, salt, nutmeg, and brown sugar
  • Beat mix until creamy, put into a pastry-lined 8" pie plate
  • Bake 20-25 minutes; until crust browns.

    This recipe looks like one where you really taste the sweet potato, and not one where the sweet potato is a stand-in for pumpkin. Very interesting, almost savory.

    i use much more sugar ........a cup or more per pie nutmeg,vanilla exact....whole eggs.....stick of butter....cinninamon....half a cup of milk
