Sweet Potato Pie. It doesn't get much more classic than this. If you've never had it, you owe it to yourself. Of course, make your own pastry as well.

If you aren't used to this type of texture, or if you rpotatoes didn't retain much water, you can add butter to help make the batter creamier.
