Sour Cream Orange Fudge Recipe
Lovely sweet creamy (very rich) orange fudge. Prep time in this recipe includes cooling after.

Ingredients
  • 3 cups brown sugar
  • 1 cup sour cream
  • 1/4 cup orange juice
  • pinch of salt
  • 1/4 cup soft butter
  • grated rind of one orange (or 1 tsp vanilla)
  • 1 cup nuts (optional)

Directions
  1. Butter an 8x8" (2 L) pan.
  2. Over medium heat, in a fairly heavy pan, cook the brown sugar, sour cream and orange juice, stirring until the mixture reaches the boiling point.
  3. Continue boiling WITHOUT STIRRING until mix reaches 240 degrees on a candy thermometer (or until it forms a soft ball when dropped in cold water). This should take 8 to 10 minutes.
  4. Remove from heat and add salt, butter and orange rind. If you don't want a strong orange flavor use the vanilla instead.
  5. Beat until it thickens and loses its shine.
  6. Add the chopped nuts, if desired, and pour into the buttered pan.
  7. Cool and cut into squares.
