Mango chutney served beside a roasted chicken and rice, oh, so, nice. Perfect for summer. This recipe makes 6 pint jars. Store remaining jars or share

Ingredients
  • 2 cups sugar
  • 1 cup distilled white vinegar
  • 6 cups mangoes (4-5), peeled and cut into 3/4 inch pieces
  • 1 medium onion, chopped
  • 1/2 cup golden raisins
  • 1/4 cup crystallized ginger, finely chopped
  • 1 clove garlic, minced
  • 1 tea. mustard seeds, whole
  • 1/4 tea. red chili pepper flakes ( hot)

Directions
  1. Combine sugar and vinegar in a 6 quart pot
  2. Bring to boil
  3. Stir until sugar dissolves
  4. Add remaining ingredients and simmer, uncovered, until syrup is slightly thickened, 45 minutes to 1 hour. Stir occasionally during cooking
  5. Pour into clean, hot jars leaving 1/2 inch at top. Close jars. Process in a water bath 15 minutes.

I made this tonight following the ingredients almost exactly (used half-brown and half-white sugar) The result was a nicely flavored chutney - somewhat runny. (I simmered for 60 minutes)


Pectin would be a great idea. Thanks, hadn't thought of that.
