One Bowl Pineapple Cake With Cream Cheese Frosting Recipe

Ingredients

Batter:

2 cups all purpose flour

2 cups sugar

2 tsp. Baking soda

2 eggs

2 tsp. Vanilla extract

1 16 oz. Can crushed pineapple (including juice)

1 8 oz. Package cream cheese, room temp

1⁄2 stick butter, room temp

2 tsp. Vanilla extract

2 cups confectioner’s sugar

1⁄4 cup milk or enough for frosting consistency

Directions

Beat all ingredients together in a large bowl. Grease a 9 x 13 baking pan. Pour batter into pan and bake for 25-30 minutes in a 350* oven. Cake should be firm in the middle. Cool for 1 hour.

One Bowl Cream Cheese Frosting:

1 8 oz. Package cream cheese, room temp

1⁄2 stick butter, room temp

2 tsp. Vanilla extract

2 cups confectioner’s sugar

1⁄4 cup milk or enough for frosting consistency

Beat all ingredients in a large bowl. Frost the entire top of cake and refrigerate until ready to serve.

Alterations

I have been using this recipe for over 20 years and since I am diabetic, I have altered it with substituting the 2 cups of sugar in the batter with 1/2 cup of Splenda and 1 cup of sugar free Nestles' Quik chocolate drink powder. The chocolate makes a nice crust on top and frosting is not needed. However, changing the frosting ingredients to two 8 ounce packages of fat free cream cheese and substituting 1 cup splenda and 1/2 teaspoon of maple favoring in lieu of two cups of sugar, makes a very nice topping. Also, subbing the milk with sugar free maple flavored syrup can make the frosting taste sweeter.
