Thai Red Chicken Panini

- 10 ounces boneless chicken thighs, thickly sliced shopping list
- 1/3 cup Thai red curry paste shopping list
- 2 pita breads split in half horizontally shopping list

- SATAY SAUCE************************ shopping list
- 1 cup of cashew nuts lightly toasted shopping list
- 1 teaspoon crushed red pepper flakes shopping list
- 1/4 cup soy sauce shopping list
- 1 cup coconut milk shopping list
- 1/4 cup cilantro leaves, plus extra to garnish shopping list
- 2 tablespoons palm sugar or light brown sugar shopping list
- 2 tablespoons rice wine vinegar shopping list
- 2 kaffir lime leaves, shredded shopping list
- 2 tablespoons peanut oil shopping list
How to make it
- To make the satay sauce ;
- place the nuts in a food processor and pulse until finely chopped.
- place in a small pan with the remaining satay ingredients and heat gently for 4- 5 minutes, stirring frequently to prevent sticking, until sauce is thick and glossy.
- mix the chicken thighs with the red curry paste and thread onto 4 metal skewers.
- preheat the sandwich grill and lay the skewers directly on the heat, bringing down the top plate on the grill to seal the chicken.grill for 4 to 5 minutes until the chicken is cooked thoroughly , remove from heat and set aside.
- when the meat is cool enough to handle, push the chicken off the skewers directly on the pita breads.
- toast the breads in the cleaned grill for 1 to 2 minutes, until they are crispy and the chicken is hot .
- cut each pita in half and serve immed. with a bowl of warm cashew satay sauce for dipping, garnish with cilantro......enjoy
