  • a 19-ounce can of chickpeas
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon of salt
  • a pinch of ground pepper
  • 1/2 teaspoon of your favorite dried herb or spice (we used garam masala, an Indian blend; oregano would work well, too).

Directions
  1. Drain, rinse, and pat-dry the chickpeas.
  2. Toss them in a bowl with oil, salt, ground pepper, and dried herb or spice.
  3. Arrange them in a single layer on a rimmed baking sheet, and cook at 300-degrees F, stirring occasionally until they have browned and begin to crisp, about 50 minutes.
  4. Serve at room temperature.
  5. Chickpeas can be stored in an airtight container for up to 5 days.

I never thought to roast my own chickpeas. We buy them in the Indian market already done up... but WOW! cool idea and this way one gets to choose the flavour that they want. Great post. Many Thanks.
