Tuna Burger Recipe
Great burger for lunch with chips, or to get away from pork, serve the patty with grits for breakfast along side scrambled eggs and bisquits.

Ingredients
  • 1 can Star Kist tuna, drain and squeeze off liquid
  • 1 egg, slightly beaten
  • 8 saltine crackers, crushed fine
  • 2 scallion tops, chopped fine
  • 1-2 T Hellman's/Best Food mayonaise, add as needed to bind ingredients
  • dash white pepper
  • oil for frying
  • 2 slices tomato
  • lettuce
  • hamburger bun, seeded

Directions
  1. Mix the 1st six ingredients and mix well.
  2. Add oil to pan and heat on medium high.
  3. Make mixture into 2 patties for burgers or 4 patties for breakfast and place in pan.
  4. Brown until golden on the 1st side (approximately 4-5 minutes).
  5. Turn patties and brown the 2nd side (approximately 3-5 minutes).
  6. Place burger on bun with lettuce and a slice of tomato.
