City Chicken Recipe

Ingredients

2 lb veal, cut into 1 1/2 inch cubes (they also sell "city chx cubes in the meat section in some places)

1 cup fine cracker crumbs (i used saltine and grinded them in chopper)

1 1/2 tsp salt (which i dont use)

1 tsp paprika or cayenne pepper

3/4 tsp poultry seasoning

1 egg slightly beaten

2 tbsp milk

1 chicken bouillon cube

olive oil for frying

Directions

Rinse meat

Thread meat cubes on 6 short skewers

Combine crumbs and seasonings

Combine egg and milk

Dip meat in egg mixture, then crumbs

Brown on all sides in hot cooking oil

Dissolve boullion cube in 1/2 cup water

Transfer browned meat to small baking dish, pour chicken boullion over meat

Cover and bake @ 350 for 45 minutes

Uncover and bake for 30

* the last time i made this, i forgot the oven temp, and put it on 450 degrees and covered. baked for about 30 minutes and it was done and was still yummy.*
