City Chicken Recipe
My mom used to make this for me when i was a kid. I just love this dish, but now i add a little heat for some added flavor! ENJOY

Ingredients
  • 2 lb veal, cut into 1 1/2 inch cubes (they also sell "city chx cubes in the meat section in some places)
  • 1 cup fine cracker crumbs (i used saltine and grinded them in chopper)
  • 1 1/2 tsp salt (which i dont use)
  • 1 tsp paprika or cayenne pepper
  • 3/4 tsp poultry seasoning
  • 1 egg slightly beaten
  • 2 tbsp milk
  • 1 chicken bouillon cube
  • olive oil for frying

Directions
  1. Rinse meat
  2. Thread meat cubes on 6 short skewers
  3. Combine crumbs and seasonings
  4. Combine egg and milk
  5. Dip meat in egg mixture, then crumbs
  6. Brown on all sides in hot cooking oil
  7. Dissolve boullion cube in 1/2 cup water
  8. Transfer browned meat to small baking dish, pour chicken boullion over meat
  9. Cover and bake @ 350 for 45 minutes
  10. Uncover and bake for 30
  11. * the last time i made this, i forgot the oven temp, and put it on 450 degrees and covered. baked for about 30 minutes and it was done and was still yummy.*
