How to make it

  • In large pot, cover ribs with cold water; bring to a boil. Reduce heat, cover and simmer until fork-tender, about 45 minutes. Drain and transfer to a 13 x 9 “ glass baking dish.
  • In a saucepan, combine coffee, molasses, vinegar, tomato paste, Worcestershire sauce, ginger, salt, allspice and hot pepper sauce; bring to a boil. Reduce heat and simmer until reduced to 2 2/3 cups, about 15 minutes. Pour over ribs, turning to coat; let cool. Cover tightly with foil and refrigerate for 4 hours. (Make ahead and refrigerate at this point for up to 24 hours.)
  • Bake in 325 F oven for 30 minutes. Uncover, turn ribs and bake, basting occasionally, until meat almost falls off the bone and sauce is thickened, about 45 minutes. Serves 6
