Ingredients
  • One medium onion, chopped
  • one stick of butter
  • 4 or 5 chicken breasts, poached and cut into bite-size pieces
  • 2 cups of rice, cooked
  • two cans cream of mushroom soup
  • two cans chicken and rice soup
  • one small can of mushroom stems and pieces (optional)
  • one cup sour cream
  • one teaspoon black pepper
  • one half teaspoon poultry seasoning
  • dash of nutmeg
  • three cups of grated sharp cheddar, divided

Directions
  1. Cook the chopped onion in the stick of butter until soft;
  2. Mix all remaining ingredients with cooked onion and butter, including two cups of cheese, in a large bowl;
  3. Pour mixture into a greased 9X13 casserole;
  4. Bake at 350 degrees for 45 minutes;
  5. Sprinkle the top with remaining cup of cheese and bake 5 more minutes until cheese melts.
