Coconut Macaroons Recipe
This is my mom's recipe which she got from a Baker's coconut package. I like these because they mix up quickly in only one bowl and you don't have to use the mixer!

Ingredients
  • 5 1/3 cups coconut / 14 oz pkg
  • 2/3 cup sugar
  • 6 tablespoon flour
  • ¼ teaspoon salt
  • 4 egg whites
  • 1 teaspoon almond extract

Directions
  1. Preheat oven to 325°.
  2. Grease and flour baking sheets; set aside.
  3. Mix coconut, sugar, flour and salt in large bowl.
  4. Stir in egg whites and almond extract until well blended.
  5. Drop coconut mixture into 36 mounds, 2 inches apart, on prepared baking sheets, using about one tablespoonful of the coconut mixture for each mound.
  6. Bake 20 min. or until edges are golden brown.
  7. Immediately remove from baking sheets to wire racks. Cool completely.
