Blue Blazin Toasted Muffins

Love these little sandwiches. I have left out the walnuts and used green olives instead of ripe...love it both ways. Found online.

Mix butter and blue cheese together.
Add the cognac, Parmesan, walnuts, green onions, basil and cayenne and mix well
Lightly toast the muffin halves, spread with cheese mix, top with a ripe olive slice and stick under the broiler until lightly browned.

This is great, my boyfriend likes putting cheese on his english muffins, I'm going to suprised him with this!

Oh, honey, I make a dip with blue cheese and nuts that is so close to this, I know this is terrific. Love he combination of flavors and this would be a great nibble with drinks.
