Blue Blazin Toasted Muffins Recipe
Love these little sandwiches. I have left out the walnuts and used green olives instead of ripe...love it both ways. Found online.

Ingredients
  • 1/4 cup butter, room temperature
  • 2 ounces Maytag blue cheese, room temperature
  • 1 tablespoon cognac (optional)
  • 1/4 cup grated Parmesan
  • 1/4 cup chopped toasted walnuts
  • 2 tablespoons minced green onion
  • 1 teaspoon chopped fresh basil
  • cayenne to taste
  • English muffins
  • ripe olive slices for garnish

Directions
  1. Mix butter and blue cheese together.
  2. Add the cognac, Parmesan, walnuts, green onions, basil and cayenne and mix well
  3. Lightly toast the muffin halves, spread with cheese mix, top with a ripe olive slice and stick under the broiler until lightly browned.

Oh, honey, I make a dip with blue cheese and nuts that is so close to this, I know this is terrific. Love he combination of flavors and this would be a great nibble with drinks.
