Caramelized Onion Fig And Stilton Pizza Recipe
Use vidalia onions, but if you can’t find them, then use 3 yellow and 3 red onions.

  • 2 tsp. Olive oil
  • 1 tsp. Butter
  • 3 Vidalia onions, thinly sliced or 3 yellow and 3 red onions, thinly sliced
  • 6 dried figs, stems removed, then sliced
  • 1 (10-ounce) thin prebaked pizza crust
  • 3 ounces Stilton cheese, crumbled

Directions
  1. To caramelize the onions, in a 12" nonstick skillet over medium heat, heat the oil and butter. Add the onions and cook, stirring occasionally, until light golden, about 6 minutes. Reduce the heat to low, stir in the figs and cook, stirring occasionally, until the onions are golden brown and well softened and the figs are softened, about 12 minutes.
  2. Preheat the oven to 450 F. Place the pizza crust on a nonstick pizza pan or baking sheet. Spoon the oonion mixture on the crust, then sprinkle with the cheese. Bake until heated through and the cheese melts slightly, about 15 minutes.
  3. Stromboli
  4. This is an easy and delicious Stromboli that my family loves. You can change up the veggies to anything you want, just make sure they’re not too watery.
  5. 1 10-ounce tube refrigerated pizza dough
  6. 1/3 cup shredded part-skim mozzarella cheese
  7. ½ cup thinly sliced artichoke hearts
  8. 3 roasted red peppers, sliced into thin strips
  9. ½ cup thinly sliced salami
  10. Preheat the oven to 375 F; line a baking sheet with foil and spray with nonstick cooking spray.
  11. On a lightly floured surface, turn out the dough; press into an 8 x 12" rectangle. Sprinkle with the cheese, leaving a 1" border along the edges. Top with the artichoke hearts, peppers and salami. Starting on a short end, roll up the dough jelly-roll style to enclose the filling. Crimp the edges to seal.
  12. Place the Stromboli seam-side down, on the baking sheet. Bake until golden brown and crusty, 20 to 25 minutes. Cut into quarters and serve piping hot.
