How to make it

  • Mix flour, sugar, and baking powder in large bowl.
  • In small bowl, mash banana with soymilk until lumps are reduced.
  • Add banana mixture to dry ingredients, blend until smooth.
  • If using, fold in nuts, chocolate/carob chips, berries.
  • Heat oil or PAM in non-stick pan over med-high heat.
  • Portion out batter into pan. When edges turn golden and pancakes start to bubble, flip and cook until done.
  • Top with garnish of choice, and enjoy a cruelty-free breakfast or snack.

    So simple and so darn delicious. An all around winner. I used organic flax milk and added chopped walnuts and Maine wild blueberries. So Good! Doubt there will be any leftovers to try cold, but that sounds great too. I'll have to make a bigger batch in order to have leftovers. Thanks!

    These came out great! I used almond milk instead and added some pumpkin spice and vanilla extract. Cooked them in coconut oil, topped with earth balance & powdered sugar. My boyfriend and I loved them! :)

    question? 2 bananas on hand so I doubled the recipe, planning to cook and freeze. I just couldn't get them to cook in the center. What did I do wrong? Looked great smelled better--I just couldn't get around the gooey mouthfeel--no matter how long I cooked a couple of them!. My boyfriend ate them, gave them a thumbs up, so he gets the frozen ones. What went wrong?

    These were absolutely amazing and easy to prepare. Walnuts added in the mix and I think I might lessen the sugar next time. Very sweet, but oh so good. Three of us ate the batch.

My favorite thing to do is to add chocolate chips and then spread PB on them when they are done. They also taste fantastic cold as leftovers, honest!
