Light, fluffy, and delicious. Perfect hot and right out of the pan, or cold slathered with fruit or sprinkled with sugar.

Ingredients
  • 1 c unbleached flour
  • 2 tsp baking powder
  • 1 ripe banana, mashed
  • 1 1/4 c soymilk
  • 1 tbsp unrefined sugar
  • Optional:
  • additional banana, sliced for garnish
  • pure maple syrup
  • chopped walnuts
  • dairy-free chocolate or carob chips
  • mixed berries
  • dairy-free whipped topping

Directions
  1. Mix flour, sugar, and baking powder in large bowl.
  2. In small bowl, mash banana with soymilk until lumps are reduced.
  3. Add banana mixture to dry ingredients, blend until smooth.
  4. If using, fold in nuts, chocolate/carob chips, berries.
  5. Heat oil or PAM in non-stick pan over med-high heat.
  6. Portion out batter into pan. When edges turn golden and pancakes start to bubble, flip and cook until done.
  7. Top with garnish of choice, and enjoy a cruelty-free breakfast or snack.
