How to make it

  • Preheat oven to 350F. Position a rack in the lower third of the oven.
  • CRUST: Melt butter. Remove from heat and stir in sugar, vanilla, and salt. Add the flour and mix until just blended. Press in the bottom of a parchemin-lined 8-in square pan. Bake 25-30 minutes at 350F until well browned at the edges and slightly browned in the center.
  • TOPPING: While the crust is baking, stir together the flour and sugar. Whisk in the eggs. Stir in the preserves. Stir in the lemon juice. When the crust is ready, turn the oven down to 300F, pour the filling over the crust and bake 20 to 25 minutes, or until topping is puffed and no longer jiggles when the pan is tapped.
  • Dust with powdered sugar right before serving.
  • Store in fridge for 3 days. Do not freeze.

    This recipe is like the one I grew up with. I almost posted it to my recipes, but there are so many Lemon Square recipes already listed in Group Recipes by other people......with slightly different variations, though.
    I really can't wait to try yours with the apricot!

    Lemon Squares

    INGREDIENTS
    2 cups sifted all-purpose flour
    1 cup confectioners' sugar
    1 cup butter, melted

    4 eggs
    2 cups white sugar
    1 teaspoon baking powder
    1/4 cup all-purpose flour
    5/8 cup lemon juice


    DIRECTIONS
    Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
    In a medium bowl, stir together 2 cups flour and confectioners' sugar. Blend in the melted butter. Press into the bottom of the prepared pan.
    Bake in the preheated oven for 15 minutes, or until golden. In a large bowl, beat eggs until light. Combine the sugar, baking powder and 1/4 cup of flour so there will be no flour lumps. Stir the sugar mixture into the eggs. Finally, stir in the lemon juice. Pour over the prepared crust and return to the oven.
    Bake for an additional 30 minutes or until bars are set. Allow to cool completely before cutting into bars.
