My Quick Italian Party Tray

- 1 *LARGE* TRAY shopping list
- Blank Angus deli roast beef, thinly sliced, not shaved shopping list
- pastrami, thinly sliced, not shaved shopping list
- genoa salami shopping list
- Assortment of sliced cheeses (I used Provolone, Swiss, Muenster) shopping list
- grape tomatoes, washed (I wash them in a little soda water, rub them dry.- gives them a nice sheen) shopping list
- Red, yellow, green peppers, several cut in half, used as little "bowls" shopping list
- Some of the peppers, I sliced vertically shopping list
- endive shopping list
- 1 small container cream cheese and chives shopping list
- Assortment of olives - Kalamata, black olives, fancy stuffed olives shopping list
- Curly leaf lettuce shopping list
- paprika, cayenne shopping list
- Cold dip or dressing for meats shopping list
- OPTIONAL: marinated artichokes shopping list
How to make it
- Hope you're getting excited about the possibilites with this tray! :)
- 1 LARGE TRAY
- Line and cover the tray with lettuce (I used a large *metal* tray, keeps it cold)
- Loosely roll the beef and pastrami
- Arrange on tray, along with the salami
- Stuff the endive* with cream cheese/chives, sprinkling with paprika or cayenne
- Fill pepper "bowls" with some of the olives (also may use bowls for a cold dip or marinated artichokes)
- Place the cheeses on tray
- Arrange ALL on tray in a creative way -
- Place remaining olives and the red, yellow, green pepper strips in a "scattered fashion" between meats and cheeses
- Sprinkle randomly with fresh basil
- This tray is really quite lovely and quite impressive
- *ENDIVE is delicious, and wonderful. (I always think of endive as "little boats", holding treasures! ) Wash, cut the end off, separate leaves carefully, then spoon the "stuffing" inside the "little boat".
- Added to the table were: a pasta salad, ciabatta bread, rosemary-potato bread, Italian herb-Parmesan crackers
- Your family or guests will love this, and you will have time to spare and graciously entertain.
