Ingredients
  • 1 box Mori-Nu extra-firm silken tofu
  • 1 tbsp coconut oil
  • 2/3 c maple syrup or sugar
  • 2 tsp vanilla
  • Pinch of salt
  • Chocolate or carob variation: Use only 1 tsp vanilla, and add 1/3 c cooled, melted chocolate or carob chips.

Directions
  1. Puree in blender until smooth. Freeze in freezer-safe dish until firm OR follow ice cream maker's directions.

Now that's cool! I just started using tofu around 4 months ago and I love it. I like it in stir frys and salad dressing.

I tried out another tofu soy ice cream before this one, and unfortunately I though I could get away with using cheap soymilk instead of the stuff that actually tastes good. I thought, hey, I'll never know. Big mistake, I learned to use quality ingredients after that. :P
