Ingredients
  • 2 tbls. olive oil
  • 2 lbs. small new potatoes quartered or, if using larger potatoes, cut into1 in. pieces
  • 1 tbls. garlic, finely chopped
  • 1 shallot, finely chopped
  • 1 tsp. thyme, dried
  • 1 tsp. rosemary, finely chopped
  • 1/8 tsp. nutmeg, freshly ground
  • 1/4 cup balsamic vinegar
  • Salt and pepper to taste

Directions
  1. Preheat oven to 400
  2. Put baking rack in lower third of oven
  3. Heat olive oil in large skillet over medium-high heat
  4. Add potatoes, garlic and shallots
  5. Toss in skillet until well mixed
  6. Add thyme, rosemary and nutmeg
  7. Toss well
  8. When potatoes are hot, transfer to baking pan and spread in single layer
  9. Put baking pan in oven
  10. Bake about 25 minutes, until golden, turning once midway
  11. Remove form oven
  12. Add vinegar
  13. Toss well
  14. Season with salt and pepper
  15. Return to oven until sizzling, about 5-8 minutes
