Roasted New Potatoes with Balsamic Vinegar

- 2 tbls. olive oil shopping list
- 2 lbs. small new potatoes quartered or, if using larger potatoes, cut into1 in. pieces shopping list
- 1 tbls. garlic, finely chopped shopping list
- 1 shallot, finely chopped shopping list
- 1 tsp. thyme, dried shopping list
- 1 tsp. rosemary, finely chopped shopping list
- 1/8 tsp. nutmeg, freshly ground shopping list
- 1/4 cup balsamic vinegar shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven to 400
- Put baking rack in lower third of oven
- Heat olive oil in large skillet over medium-high heat
- Add potatoes, garlic and shallots
- Toss in skillet until well mixed
- Add thyme, rosemary and nutmeg
- Toss well
- When potatoes are hot, transfer to baking pan and spread in single layer
- Put baking pan in oven
- Bake about 25 minutes, until golden, turning once midway
- Remove form oven
- Add vinegar
- Toss well
- Season with salt and pepper
- Return to oven until sizzling, about 5-8 minutes
