Pumpkin Bars - Can be made gluten free

- 1 cup flour shopping list
- 2/3 cup sugar shopping list
- 1 1/4 teaspoons baking powder (gluten free - check - Most are ok) shopping list
- 1 teaspoon cinnamon shopping list
- 1/8 teaspoon salt shopping list
- 1/2 teaspoon baking soda shopping list
- 1/8 teaspoon ground cloves shopping list
- 1 tablespoon mayonaise (gluten free - use Hellman's) shopping list
- 1 cup pumpkin shopping list
- 3 egg whites slighly beaten shopping list
- 1/4 cup plus 1 tablespoon corn oil shopping list
- 1/4 cup water shopping list
- Cream cheese frosting: shopping list
- 2 cups confection sugar shopping list
- 1/4 cup soft butter shopping list
- 3 oz. softened cream cheese shopping list
- 3/4 teaspoon vanilla shopping list
How to make it
- Preheat oven 350 F and spray an 8 x12" pan with non - stick spray (gluten free check spray). Sift together the flour mixture, sugar, baking powder, cinnamon, salt, baking soda and cloves.
- Stir in the mayonaise, pumpkin, egg whites, corn oil, and water till thoroughly combined.
- Spread in the oiled pan. Bake 20 minutes or till a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack.
- Cream cheese frosting: combine 1/4 cup butter, cream cheese and vanilla in mixer/blend - slowly and confectioner sugar and mix until well blended.
- Spread cream cheese frosting ontop of cooled pumpkin bars.
- Refrigerate to keep moist and fresh.
