How to make it

  • Preheat oven 350 F and spray an 8 x12" pan with non - stick spray (gluten free check spray). Sift together the flour mixture, sugar, baking powder, cinnamon, salt, baking soda and cloves.
  • Stir in the mayonaise, pumpkin, egg whites, corn oil, and water till thoroughly combined.
  • Spread in the oiled pan. Bake 20 minutes or till a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack.
  • Cream cheese frosting: combine 1/4 cup butter, cream cheese and vanilla in mixer/blend - slowly and confectioner sugar and mix until well blended.
  • Spread cream cheese frosting ontop of cooled pumpkin bars.
  • Refrigerate to keep moist and fresh.
