This was a huge success! It was so yummy and my family loved it. It's been put on my greatest hits list and will definitely be making it again.
Just one question...is using foil simply for easier cleanup? Or does it add somehow to the flavor? Thanks!

Hi there- it took me awhile to respond with feedback, but I must give you a round of applause! My boyfriend and I absolutely loved the recipe. I made it with broccoli and mashed potatoes, just like you suggested, and it was simply wonderful. I have to admit that I was skeptical at first because of the 2 hour cooking time, but I was pleasantly surprised. 1 can of soup and 1 can of milk was plenty; it rendered plenty of gravy. I added a little bit of McCormick pork seasoning with the pepper and salt rub(used very little salt). I have another pork tenderloin and I'm using your recipe, but with cream of chicken soup, because that's what I had! I bet it will be almost as good. Thank you for teaching me this method of cooking! A++++++ :)
