Cold Soba Noodles Recipe
This is my version of Japanese cold soba. It's a simple and quick dish for a fulfilling meal. Easy to make, as most of the ingredients can be bought straight from the shelf.

Ingredients
  • Half packet of Soba noodles (maybe brown/ green)
  • 2 tbsp Thinly chopped leek
  • 2 tbsp Thinly chopped spring Onion
  • 4 quial eggs
  • 1 sheet of japanese seaweed (Nori)
  • 4 tsp of wasabi
  • 1 litre Boiling water
  • Some ice
  • Sauce:
  • 200ml of Cold soba sauce
  • (buy from the Japanese grocery shop)

Directions
  1. Prepare the leek and spring onion, then cut the nori with scissors into tiny thin strip about 5cm long.
  2. Cook the soba noodles in the boiling water over the stove for 3 minutes only, remove from heat immediately and rinse it in a bowl of cold water with ice in it. Use hand if needed.
  3. Leave the noodles aside. Noodles should feel a little rubbery.
  4. Serve with placing the noodles on top of a pile of ice, in a dish. Garnish it with nori sprinkling on top.
  5. Place the eggs, chopped leek and spring onion together with wasabi on a small plate and serve. (No need to cook the eggs)
  6. Prepare a small bowl / cup for dipping the noodles into the soba sauce. Each serving about 50ml soba sauce.
