Beef Enchilada Filling Recipe
The filling for my enchiladas, my family requests that I consume beer when I make this, It is spicier then.

Ingredients
  • 1 1/2 lb ground beef (not to lean, 80-85%)
  • 1 C. chopped onion
  • 2 cloves minced garlic
  • 14.5 oz can dicrd tomatoes
  • 15 oz can dark red kidney beans
  • 1/4 tsp. ground cloves
  • 1 tsp. oregano
  • black pepper
  • 1/4 C. chopped jalapenos

Directions
  1. Brown ground beef. Really brown it, not just til the pink is gone, but til it reabsorbs the fat.
  2. Stir in onion and garlic.
  3. Add remaing ingredients and simmer until almost all the liquid is gone.
  4. Use to fill tortillas for enchiladas.
