Warm Feta Corn Salad Recipe
Wonderful dish, the warm corn and feta makes a crisp yet creamy mix.

Ingredients
  • 2 Cans Yellow Corn (mexican spicy mix, or add diced cherry tomatoes)
  • 1-2 Cans White Corn (or frozen bag of mixed)
  • 1 block feta, diced
  • 1/2 green onion diced
  • Salt and pepper to taste (thyme, garlic, basil, and lime juice works good as well)

Directions
  1. Place the corn in a large corningware dish that will work in the oven or microwave. (can also pan fry, makes for crunchy feta)
  2. Mix in the Feta and onion. (can use bell peppers also)
  3. Season as wanted with salt and pepper (I add a pat of butter)
  4. Microwave for 5 minutes if frozen. If baking put on 350 degrees F and bake till boiling or the feta begins to brown.

I've never had this. Looks easy, I'll give it a go for lunch and let you know how it goes.

I think this would be an excellent side to serve with grilled fish and meats...especially kebobs...
nice and easy with great flavours...

i'm definitely going to add the red pepper- but i am not sure it really needs to be cooked even...
sounds like it would be good just tossed as a salad...
