Easy Breezy Irish Potatoes Recipe
If you are in a real hurry and don't have time to make a side dish, you can't beat these. Because of the scallions and sour cream, your guests will never know they are aren't "from scratch".

Ingredients
  • 4 cups water
  • 2 cups chopped scallions (about 15 scallions)
  • 1/4 cup unsalted butter (1/2 stick)
  • 1 teaspoon salt (kosher)
  • 3 cups instant mashed potato flakes
  • 1/2 cup sour cream
  • 1/4 freshly ground pepper

Directions
  1. In a large sauce pan, combine the water, scallions, butter, and salt, boil for 4 to 5 minutes.
  2. Remove from heat and add the potato flakes and mix well.
  3. Stir in the sour cream and pepper.
