Fast And Simple Spicy Chicken Soup Recipe
I make this for my sweetie when we're craving Cajun food but don't have the time to make the real stuff. It is also something we like to eat when we're trying to lose weight.

Ingredients
  • 1 lb chicken breasts or thighs, skinned, boned, cut into bitesized pieces
  • 1 lb andouille sausage, sliced diagonally
  • 2 large cans diced spiced tomatoes
  • 1 15-oz can garbanzo or kidney beans (or one of each)
  • 1 small head cabbage, diced
  • 3 garlic (diced or smashed, or substitute 1 tablespoon garlic mash from jar)
  • 3 cups V8
  • 1 large onion, diced, sauteed (optional)
  • 1 bag frozen vegetables (optional - I like corn)
  • 1/2 cup rice (optional, leave out to reduce carb load)
  • water to taste, more needed if rice added

Directions
  1. Mix all ingredients in stew pot.
  2. Bring to boil.
  3. Simmer until cabbage is tender and meat cooked all the way through (be sure to check).
  4. NOTE: This cans well.
  5. NOTE: Grated cheese for optional garnish.

Thanks! The spices from the sausage mean you don't need to add anything else. I don't even add salt or pepper, and it is jsut fine, but you could, of course. :)
