How to make it

  • Start by heating the vegetable oil in a large stock pot
  • I season the tips with Lawry's, pepper and then coat with the flour.
  • I cooked the tips and the chopped onion over very high heat and brown them thoroughly.
  • I reduce the heat and add the garlic,Rotel,Beef Broth and the chili powder.
  • I bring this to a boil and transfer this to a crock pot for the remainder of the cooking time.I serve this on tortillas for breakfast with Picante Sauce
  • If you have any left you may add diced potatoes to the crock pot and serve the Mexican stew with mexican rice and beans for a great dinner.In our home we don't have many left overs but if you do come up with something creative ! Two meals out of one would be great.
