Bacon Egg and Rice

- 2 Cups rice (fast cooking rice) shopping list
- 4 Cups water shopping list
- 1 Pound bacon shopping list
- 8 eggs shopping list
- soy sauce shopping list
How to make it
- Bring water to a boil on high heat.
- Add rice, cook for 1 minute, stirring the whole time.
- Remove from heat. And cover.
- You can do this the night before and put into fridge or do it in the morning and keep covered on the counter so rice absorbs the water.
- Slice bacon into small strips and fry. When done remove bacon from grease.
- Keep about 1 to 2 tablespoons of grease and put back into frying pan, discard the rest.
- Beat eggs slightly and add to bacon grease in pan.
- Cook until they just start to set and add rice and bacon.
- Stir well to mix.
- Add soy sauce until you get a nice light brown color, you will use 2 to 4 tablespoons of soy sauce.
- Cover and cook until it looks dry, about 20 minutes.
- You can taste it to see if it needs more soy sauce.
