How to make it

  • Add olive oil to oven-proof skillet and add minced garlic and greens.
  • Saute greens until they're just wilted.
  • Remove from skillet and set aside.
  • In a blender, combine eggs, milk, herbs, pepper, lemon zest, and goat cheese.
  • Add sliced potatoes to the pan (do not brown the potatoes) and pour the combined egg mixture into the skillet and cook over medium heat for about 8 to 10 minutes until eggs are partially set.
  • cover skillet with overlapped sliced or grated cheese.
  • Place skillet in the oven and continue cooking until eggs are completely set and cheese is melted and bubbly.
  • To serve, slice into wedges and sprinkle with more chopped herbs.
