Goat Cheese and Herb Frittata

- 1 Tablespoon olive oil shopping list
- 2 cloves minced garlic shopping list
- bunch of greens (spinach, arugula, or watercress) shopping list
- 1 dozen eggs shopping list
- 1 can sliced white potatoes (drained, rinsed) shopping list
- 1 cup milk shopping list
- 2 tablespoons dried chives shopping list
- 1/2 teaspoon very finely minced fresh rosemary shopping list
- 1 Tablespoon chopped parsley or chives (reserve for garnish) shopping list
- 1/2 teaspoon of fresh lemon or lime zest shopping list
- 3 ounces goat cheese shopping list
- 3 ounces sliced or grated melting cheese (i.e., muenster, mozzarella or swiss) shopping list
- freshly ground pepper and salt to taste shopping list
How to make it
- Add olive oil to oven-proof skillet and add minced garlic and greens.
- Saute greens until they're just wilted.
- Remove from skillet and set aside.
- In a blender, combine eggs, milk, herbs, pepper, lemon zest, and goat cheese.
- Add sliced potatoes to the pan (do not brown the potatoes) and pour the combined egg mixture into the skillet and cook over medium heat for about 8 to 10 minutes until eggs are partially set.
- cover skillet with overlapped sliced or grated cheese.
- Place skillet in the oven and continue cooking until eggs are completely set and cheese is melted and bubbly.
- To serve, slice into wedges and sprinkle with more chopped herbs.
