Ingredients
  • 1 Tablespoon olive oil
  • 2 cloves minced garlic
  • bunch of greens (spinach, arugula, or watercress)
  • 1 dozen eggs
  • 1 can sliced white potatoes (drained, rinsed)
  • 1 cup milk
  • 2 tablespoons dried chives
  • 1/2 teaspoon very finely minced fresh rosemary
  • 1 Tablespoon chopped parsley or chives (reserve for garnish)
  • 1/2 teaspoon of fresh lemon or lime zest
  • 3 ounces goat cheese
  • 3 ounces sliced or grated melting cheese (i.e., muenster, mozzarella or swiss)
  • freshly ground pepper and salt to taste

Directions
  1. Add olive oil to oven-proof skillet and add minced garlic and greens.
  2. Saute greens until they're just wilted.
  3. Remove from skillet and set aside.
  4. In a blender, combine eggs, milk, herbs, pepper, lemon zest, and goat cheese.
  5. Add sliced potatoes to the pan (do not brown the potatoes) and pour the combined egg mixture into the skillet and cook over medium heat for about 8 to 10 minutes until eggs are partially set.
  6. cover skillet with overlapped sliced or grated cheese.
  7. Place skillet in the oven and continue cooking until eggs are completely set and cheese is melted and bubbly.
  8. To serve, slice into wedges and sprinkle with more chopped herbs.
