Ingredients
  • 4 organic chicken breasts pounded just a little
  • 1 Tbs olive oil
  • 1 tbs Butter
  • 2-3 Tbs Organic Fresh Sage
  • 1/4 Cup Quality Dry White Wine
  • 1/4 Cup Chicken Broth
  • 1/2 Lb Mozzarella Cheese
  • Flour
  • Salt & Pepper
  • Dash Cayenne Pepper

Directions
  1. Season the flour with Salt and Pepper.
  2. Dredge the slightly flattened chicken in the flour.
  3. Heat the oil and butter in a large skillet.
  4. Add the chicken. Brown on both sides. Remove from pan to a plate.
  5. Scrape the bits up and add the the wine and broth.
  6. Place the chicken back in the skillet.
  7. Add the chopped cheese to top of breasts.
  8. Top with chopped sage.
  9. Add a dash of Cayenne pepper to top of breasts.
  10. Turn heat to low.
  11. Cook for 20 mins.
  12. Serve with rice...topping the rice with the sauce left in the pan.
