Blueberry Hill Pie Recipe

Ingredients

2-9 inch flaky pastry crusts, unbaked

1 cup sugar

4-6 tablespoons flour, depending on the juciness of the blueberries

1/4 teaspoon salt

5 cups *fresh* blueberries, washed and drained

1 tablespoon fresh lemon juice

3 tablespoons butter

Directions

Combine sugar, flour, and salt in bowl

Place 1 pastry crust in a 9 inch pie plate

Sprinkle 1/2 of sugar mixture over bottom of chilled, unbaked pastry

Add blueberries and sprinkle with the remaining sugar mixture

Drizzle lemon juice over top

Dot with the butter

Cover with the top crust, sealing edges well

Bake at 375 degrees for about 30-40 minutes or until crust is golden brown

Cool on wire rack

Slice and serve with vanilla ice cream

NOTE: IF A GLOSSY FINISH IS DESIRED, BRUSH TOP PASTRY WITH SLIGHTLY BEATEN EGG WHITES. THEN SPRINKLE WITH SUGAR BEFORE BAKING....MAKE SURE THE EGG WHITES DON'T PUDDLE ON THE PASTRY
