Blueberry Hill Pie

- 2-9 inch flaky pastry crusts, unbaked shopping list
- 1 cup sugar shopping list
- 4-6 tablespoons flour, depending on the juciness of the blueberries shopping list
- 1/4 teaspoon salt shopping list
- 5 cups *fresh* blueberries, washed and drained shopping list
- 1 tablespoon fresh lemon juice shopping list
- 3 tablespoons butter shopping list
How to make it
- Combine sugar, flour, and salt in bowl
- Place 1 pastry crust in a 9 inch pie plate
- Sprinkle 1/2 of sugar mixture over bottom of chilled, unbaked pastry
- Add blueberries and sprinkle with the remaining sugar mixture
- Drizzle lemon juice over top
- Dot with the butter
- Cover with the top crust, sealing edges well
- Bake at 375 degrees for about 30-40 minutes or until crust is golden brown
- Cool on wire rack
- Slice and serve with vanilla ice cream
- NOTE: IF A GLOSSY FINISH IS DESIRED, BRUSH TOP PASTRY WITH SLIGHTLY BEATEN EGG WHITES. THEN SPRINKLE WITH SUGAR BEFORE BAKING....MAKE SURE THE EGG WHITES DON'T PUDDLE ON THE PASTRY
