Shrimp Avocado And Feta Salad Recipe
This is taken from one of my light cookbooks and is oh so good so I thought I'd share

Ingredients
  • 16 oz large shrimp, peeled & deveined
  • 3 cups diced & seeded plum tomatoes
  • 1 cup diced ripe avocado
  • 1/3 cup chopped cilantro or parsley
  • 1/4 cup diced red onion
  • 1/2 cup light feta cheese, crumbled
  • 2 T olive oil
  • 2 T freshly squeezed lemon juice
  • 1 1/2 t minced fresh garlic
  • 1 t minced jalapeno pepper or 1 t hot sauce (optional)
  • pinch salt & freshly ground black pepper

Directions
  1. Spray non stick skillet with cooking oil & place over medium-high heat. Cook the shrimp just until pink, about 3 min. Remove from heat, let cool and dice.
  2. Combine shrimp with remaining ingredients in a large serving bowl and mix well. Serve immediately & enjoy!
