Shrimp Avocado and Feta Salad

- 16 oz large shrimp, peeled & deveined shopping list
- 3 cups diced & seeded plum tomatoes shopping list
- 1 cup diced ripe avocado shopping list
- 1/3 cup chopped cilantro or parsley shopping list
- 1/4 cup diced red onion shopping list
- 1/2 cup light feta cheese, crumbled shopping list
- 2 T olive oil shopping list
- 2 T freshly squeezed lemon juice shopping list
- 1 1/2 t minced fresh garlic shopping list
- 1 t minced jalapeno pepper or 1 t hot sauce (optional) shopping list
- pinch salt & freshly ground black pepper shopping list
How to make it
- Spray non stick skillet with cooking oil & place over medium-high heat. Cook the shrimp just until pink, about 3 min. Remove from heat, let cool and dice.
- Combine shrimp with remaining ingredients in a large serving bowl and mix well. Serve immediately & enjoy!
