Fourth of July Rhubarb Drink

- 4 cups chopped rhubarb shopping list
- 2 cups of sugar shopping list
- 1/2 cup frozen orange juice concentrate shopping list
- juice and zest of one lemon shopping list
- 3 quarts of ginger ale shopping list
How to make it
- Bring the rhubarb and four cups of water to a boil in a large sauce pan over medium heat.
- Strain the mixture through a tea towel laid inside a sieve.
- Then add the sugar and orange juce concentrate along with the lemon rind and juice.
- Heat briefly to dissolve the sugar and the concentrate.
- Pour your sweetened rhubarb essence in a jar and store in the refrigerator, or re-freeze.
- To serve, mix with two parts cold ginger ale to one part of rhubarb essence.
