Fourth Of July Rhubarb Drink Recipe
From an Ontario friend, who is obsessed with fresh fruit "shrubs." Betty says this is a mid summer drink that is always a hit. I can see serving this on the Fourth of July.

Ingredients
  • 4 cups chopped rhubarb
  • 2 cups of sugar
  • 1/2 cup frozen orange juice concentrate
  • juice and zest of one lemon
  • 3 quarts of ginger ale

Directions
  1. Bring the rhubarb and four cups of water to a boil in a large sauce pan over medium heat.
  2. Strain the mixture through a tea towel laid inside a sieve.
  3. Then add the sugar and orange juce concentrate along with the lemon rind and juice.
  4. Heat briefly to dissolve the sugar and the concentrate.
  5. Pour your sweetened rhubarb essence in a jar and store in the refrigerator, or re-freeze.
  6. To serve, mix with two parts cold ginger ale to one part of rhubarb essence.
