How to make it

  • Bring the rhubarb and four cups of water to a boil in a large sauce pan over medium heat.
  • Strain the mixture through a tea towel laid inside a sieve.
  • Then add the sugar and orange juce concentrate along with the lemon rind and juice.
  • Heat briefly to dissolve the sugar and the concentrate.
  • Pour your sweetened rhubarb essence in a jar and store in the refrigerator, or re-freeze.
  • To serve, mix with two parts cold ginger ale to one part of rhubarb essence.
