Hickory Nut Cake With Brown Sugar Fudge Frosting

The hickory tree is in the walnut family, and the trees do look like walnuts at a glance. Pecans can be used also.
Ingredients
- ***CAKE*** shopping list
- 2 cups sugar shopping list
- 2/3 cup butter shopping list
- 3 eggs shopping list
- 1/8 teaspoon salt shopping list
- 2 teaspoons baking powder shopping list
- 2-1/2 cups all purpose flour shopping list
- 1 cup milk shopping list
- 1 teaspoon vanilla shopping list
- 1 cup hickory nuts, chopped(reserve a few halves for garnish) shopping list
- *****PENUCHE FROSTING***** shopping list
- 1/2 cup butter shopping list
- 1 cup packed brown sugar shopping list
- 1/4 cup milk or cream shopping list
- 2 cups confectioners sugar shopping list
- 1 teaspoon vanilla shopping list
How to make it
- Cream together sugar and butter for cake
- Add eggs; beat on medium speed on mixer for 2 minutes
- Mix dry ingredients together lightly with a fork.
- Add to creamed mixture alternately with milk.
- Mix well.
- Stir in vanilla and nuts.
- Pour into a greased & floured13-in. x 9-in. x 2-in. pan or two 8-in. pans.
- Bake at 325 degrees for 45 - 50 minutes.
- Cool.
- ******FROSTING******
- Melt butter in medium saucepan.
- Add brown sugar; boil for 2 minutes.
- Add milk; bring to boil
- Remove from heat; cool to lukewarm.
- Beat in sugar and vanilla. (Add 1/2 cup chopped hickory nuts, if desired)
- Frost cake.
- Garnish with reserved hickory nut halves

This looks yummy. I worked at a preschool that had a hickory nut tree. The squirrles used to bomb us with them.

That's hilarious morninlite! I used to live right on the ocean where the seagulls would bomb us with fish guts! But back to Jett's cake, it sound really, really good! My hubby would love that icing!
