Mocha Bread Pudding with Caramel and Vanilla Sauces

- 8 cups day old Italian or French bread, torn into pieces shopping list
- 1 cup flaked coconut shopping list
- 1 cup raisins shopping list
- 1 cup chopped nuts shopping list
- 1 tsp. cinnamon shopping list
- 3/4 cup sugar shopping list
- 2 cups half and half shopping list
- 1 cup milk shopping list
- 1/2 cup coffee-flavored liqueur or coffee shopping list
- 1/2 cup butter or margarine, melted shopping list
- 3 eggs shopping list
- CARAMEL SAUCE: shopping list
- 3/4 cup firmly packed brown sugar shopping list
- 1/4 cup butter or margarine shopping list
- 1 Tbsp. light corn syrup shopping list
- 1/4 cup half and half shopping list
- 2 Tbsp. coffee-flavored liqueur or coffee shopping list
- vanilla SAUCE: shopping list
- 3/4 cup sugar shopping list
- 1 Tbsp. flour shopping list
- 2/3 cup half and half shopping list
- 2 Tbsp. margarine or butter shopping list
- 1 tsp. vanilla shopping list
How to make it
- Heat oven to 325 degrees.
- Grease a 13x9-in pan.
- Place bread in the greased pan.
- Add raisins, coconut, nuts and cinnamon; toss to mix
- In a medium bowl, combine 3/4 cup sugar, 2 cups half-and-half, milk, 1/2 cup liqueur, 1/2 cup butter and eggs; beat until well blended.
- Pour over bread mixture; toss to mix well.
- Let stand 15 minutes or until most of liquid is absorbed.
- Bake at 325 degrees for 1 hour or until set.
- Meanwhile, prepare caramel sauce.
- In medium saucepan, combine brown sugar, 1/4 cup butter and corn syrup; cook over low heat until mixture boils, stirring constantly.
- Cook 1 minute.
- Stir in 1/4 cup half-and-half and 2 Tbsp. liqueur.
- Remove from heat; keep warm.
- To prepare vanilla sauce, in medium saucepan combine 3/4 cup sugar and flour; mix until blended.
- Stir in 2/3 cup half-and-half; cook over medium heat until mixture boils, stirring constantly.
- Stir in 2 Tbsp. butter and vanilla.
- Remove from the heat.
- Serve each dish of bread pudding with 1 Tbsp. of each warm sauces.
