How to make it

  • In a large, heavy-bottomed saucepan, saute the onion in the oil over medium-high heat until golden brown, about 7 to 10 minutes.
  • Add all the remaining ingredients, bring to a boil, then reduce the heat and simmer uncovered at the lowest possible heat for 4 hours. (This long cooking removes as much acidity as possible from the tomatoes.)
  • Puree sauce in 2, 3, or more batches to prevent it from spilling out of your food processor or blender.
  • Will keep 2 weeks, covered, in the refrigerator

    I am wanting to create my own barbecue sauce and everything I find for a basic foundation starts with ketchup/catsup. I'm loving that yours does not! Thanks for posting it. It will be a perfect foundation, especially because there is no garlic. I love garlic, but my father cannot have garlic so I am challenging myself to create garlic-less rubs and sauces.

    I love that you don't use ketchup in your BBQ sauce recipe! Tastes so much better this way. Instead of Liquid Smoke (which I can't get) I steep some Lapsang Souchong tea and use that for smokiness.
