How to make it

  • In large bowl, whisk sugar, flour and cocoa until well mixed
  • With an electric mixer, beat eggs in large mixing bowl
  • Add dry ingredients, butter and vanilla
  • Mix well
  • Stir in pecans and pour into a 3-quart Pyrex dish
  • Place in water bath and bake on oven rack at lowest level for 1 hour and 20 minutes
  • DO NOT OVERBAKE
  • Remove from water bath and cool completely on wire rack
  • The top will be crusty as it cools
  • Top with whipped cream or vanilla ice cream
