Leftover Roast Beef Pot Pie Recipe

Ingredients
  • 1 1/2 onion roughly chopped
  • 2 garlic cloves minced
  • 1 red pepper roughly chopped
  • 2 carrots peeled and chopped
  • 1 stalk celery chopped
  • 4 portabello mushroom caps chopped
  • olive oil
  • butter
  • 1 cup beef broth
  • 1 1/2 cups left over beef chopped
  • salt and pepper to taste
  • 1 frozen pie crust

Directions
  1. Melt olive oil and butter over medium heat
  2. sautee vegetables until starting to brown
  3. add beef broth and reduce until sauce thickens
  4. add beef
  5. pour into pie plate
  6. cover with pie crust
  7. bake at 375 for 45 minutes until brown
