Leftover Roast Beef Pot Pie

- 1 1/2 onion roughly chopped shopping list
- 2 garlic cloves minced shopping list
- 1 red pepper roughly chopped shopping list
- 2 carrots peeled and chopped shopping list
- 1 stalk celery chopped shopping list
- 4 portabello mushroom caps chopped shopping list
- olive oil shopping list
- butter shopping list
- 1 cup beef broth shopping list
- 1 1/2 cups left over beef chopped shopping list
- salt and pepper to taste shopping list
- 1 frozen pie crust shopping list
How to make it
- Melt olive oil and butter over medium heat
- sautee vegetables until starting to brown
- add beef broth and reduce until sauce thickens
- add beef
- pour into pie plate
- cover with pie crust
- bake at 375 for 45 minutes until brown
