Moroccan Chicken Recipe
A family favourite. A treasured gift from a friend now gone. I usually quadruple this recipe and it's gone in 2 meals. Serve with couscous or rice.

Ingredients
  • 8 skinned, boned chicken thighs
  • 2 tbsp olive oil (divided)
  • 1 finely chopped onion
  • 2 minced cloves garlic
  • 1 large can tomato sauce
  • 3 tbsp honey
  • 1/2 tsp cinammon
  • 1/4 tsp cayenne pepper

Directions
  1. Saute chicken thighs in 1 tbsp olive oil until golden on both sides
  2. Saute onion and garlic
  3. Add tomoato sauce, honey, and spices
  4. Add chicken
  5. simmer slowly until sauce 'cooks down' and thickens
