Avocado Salsa Or Salad Recipe

This salad is amazingly delicious. I hope you give it a try.

Ingredients
- 2 medium Avocados
- 1 large ripe tomato, quartered, seeded and chopped
- Note: If I'm in a hurry, I use 1/2 cup of good quality Salsa instead of the ripe tomato.
- 1/2 cup red onion, finely chopped
- 1/2 yellow / orange bell pepper
- 2 garlic cloves, minced
- 2 - 3 Tbsp. fresh cilantro or parsley, chopped
- Juice of 1 large lime
- 1/2 tsp. ground cumin
- 1/2 tsp. freshly ground black pepper
- 1/2 tsp. Celtic sea salt
- Dark green leafy lettuce as a base.
- As a garnish I sprinkle sunflower seeds or Mandarine orange segments or both over the top.
Directions
- In a medium bowl combine all ingredients.
- Toss well and keep that chunky consistency.
- Serves 4-6 as a salsa.
- This is excellent as a salad dressing too or tossing with fresh veggies that have been julienned. If I make this as a salad dressing, I add a splash of Extra Virgin Olive Oil and whip it up in either the blender or food processor. I don't puree it though as I like to keep some texture.
- *If you want to add a little pep to this recipe, add a fresh jalepeno pepper.
