Kens Green With Envy Tomatillo Sauce Recipe
This is a sauce my father made on Father's Day, it went on top of shrimp tostadas (which I had posted), but would also be great on grilled chicken, steaks, taco, etc

Ingredients
  • 1 ½ # tomatillos
  • 2 cloves garlic
  • 1 jalapeno, halved and seeded
  • 1 Serrano chile, halved and seeded
  • salt and pepper, to taste
  • 4 tbsp evoo
  • ½ cup cilantro
  • 1-cup chicken stock

Directions
  1. Preheat the oven to 450
  2. Skin the tomatillos and wash clean
  3. In a large bowl, combine the tomatillos, garlic cloves, jalapeno, Serrano, salt, pepper, and evoo. Combine thoroughly.
  4. Roast in the oven for 40-45 minutes
  5. Let cool for 10 minutes
  6. Pour ingredients into a blender and puree
  7. Add cilantro and taste to see if more salt is needed, blend once more
  8. The sauce will be thick, to thin add 1 cup chicken stock and blend to combine, add more stock if necessary.
