How to make it

  • In a large stock pot or dutch oven add water and chicken make sure water covers chicken completely.
  • add celery, carrot, onion and natures seasoning or poultry seasoning.
  • bring to a boil, reduce heat and simmer until cicken is tender and cooked through about 30 minutes.
  • when chicken is tender remove from broth and allow to cool skin and debone chicken shredding the meat.
  • strain broth to remove vegetables and pour broth back into pot. keep warm on low heat.
  • While chicken cools make dumplings
  • To Make Dumplings:
  • desolve salt in the water
  • wisk the egg and add to the salt water mixture
  • in a bowl combine the flour with the egg/water mixture until it has the consistancy of pie dough (you may ave to add a bit more water)
  • roll dough out on a floured surface until it is very thin cut into squares about an inch square.
  • Back to broth:
  • Bring broth back to a rolling boil
  • drop the dumplings into the broth one by one make sure they sink into broth.(when top is covered by dumplings you need to ease them to the side of te pot so you can add the rest to the broth)
  • after all the dumplings ave been added reduce eat to medium/low and bring broth to a simmer
  • simmer 30 minutes add shredded chicken back to the pot
  • turn heat to low and add the milk or heavy cream and salt and pepper to taste.
  • simmer an additional 10 minutes and serve
