Bulgarian Potato Salad

- 4-5 large potatoes shopping list
- 2-3 green onions, finely chopped shopping list
- 1-2 tbsp. olive oil shopping list
- fresh parsley or dill shopping list
- juice of 1/2 a lemon shopping list
- salt and pepper shopping list
How to make it
- Peel and boil the potatoes for about 20-25 minutes (or until they begin to soften, but before they get too soft), drain and set aside to cool.
- In a salad bowl add the finely chopped green onions, the lemon juice and olive oil.
- Salt and pepper to taste.
- Cut the potatoes into cubes and add to the salad bowl.
- Gently mix, sprinkle with parsley or dill if you serve the salad with fish.
