How to make it

  • preheat oven to 350 degrees F.
  • butter and flour a 20 cm square pan
  • sift flour, sugar, baking powder and salt together.
  • beat egg, yogurt, melted butter, and vanilla together.
  • whisk in the flour mixture until just blended [DONT OVERMIX]
  • fold in rhubarb
  • spread batter into cake pan
  • in a bowl combine the brown sugar, flour, and cinnamon. work in the butter with your fingers until crumbly; sprinkle over cake.
  • bake for 45-50 minutes.
