Coconut Cake Doughnuts Recipe

Ingredients
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 2 tablespoons melted shortening or vegetable oil
  • 2 1/3 cups sifted all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup flaked coconut

Directions
  1. Beat eggs with sugar until light; add milk and cook shortening. Add
  2. sifted dry ingredients and coconut; stir just until blended. Chill
  3. several hours.
  4. Roll out on lightly floured surface to 1/2-inch thick. Cut out
  5. doughnuts with doughnut cutter. Fry in deep hot fat (375 degrees F)
  6. until brown; turn and brown other side (about 1 minute per side).
  7. Drain on paper towel. Sprinkle with confectioners' sugar.

Yum - and these have no calories right?!!


Henrie, you know how I love my sweets! I've never tried to make my own donuts, but this just sounds too good to pass up...brings me back to my childhood and my great-grandma frying donuts on a Saturday morning as us kids waited anxiously for the warm treats - good stuff!!


Yummm! :) My Mom used to make us girls baked applesauce doughnuts....it was a real treat! I'll have to try making these....I've never made doughnuts before, wish me luck! :)
