How to make it

  • Preheat oven to 375.
  • In a large bowl sift and mix dry ingredients well,then add the 4 eggs,oil and milk;stir well.
  • Spray a 20 inch long piece of wax paper with cooking spray.Scoop dough onto wax paper and with wet or oiled hands spread dough into a 10X14 inch rectangle.Drizzle melted butter over all and sprinkle generously with cinnamon/sugar mixture.Lift long side of wax paper and dough will start to roll over.Continue to roll up and over.Slice into 12 slices,place either in large sized greased muffin tins or baking sheet.Bake for 18 minutes.
  • While still warm drizzle with a powdered sugar frosting.

    I made these for Christmas morning. They had a great taste, but the dough was so loose after laying it out with the cinnamon it was impossible to roll. I had to spoon it into a pie pan and cut into wedges after baking. No big deal, I'll try again, perhaps I'll have better luck. Also, I didn't use as much cinnamon sugar as called for.

    A 5 forker! This are really good. I have many gluten free recipe books and have made this - I know gluten/wheat free people like to know if recipe is tested - flours are expensive/some taste like carboard - put this in your book!
