Warm Leek Salad

- 3 bunches leeks, cut horizontally. As you cut these place them in cool water for 10 minutes to clean out the sand shopping list
- 1 bag carrots, slice diagonally shopping list
- 1 red onion, chopped shopping list
- 3/4 brown or white rice, cook set aside shopping list
- 2 tomatoes (or 1/2 cup water) shopping list
- salt and pepper (cayenne or black) shopping list
- 1 Tbsp. olive oil shopping list
How to make it
- Heat oil in a large pot over low flame.
- Saute onions in the oil, keeping flame low
- Add leeks and continue to saute for 5 minutes
- Add carrots
- Add tomatoes or water (I really prefer the tomatoes)
- Simmer with the lid on until the carrots are tender (20-30 minutes). Test with a fork - if it goes thru easily it is ready
- Turn off the heat and add the cooked rice. Stir all tog. Serve warm.
- PS- Of course leftovers can be served warmed up or cold. the leeks really make this salad delish.
