Warm Leek Salad Recipe
This recipe was featured at a local vegetarian restaurant owned by a lovely Turkish man. Both of my daughters worked there and I was lucky enough to get the recipe. It is warm and comforting and the flavors blend perfectly.

Ingredients
  • 3 bunches leeks, cut horizontally. As you cut these place them in cool water for 10 minutes to clean out the sand
  • 1 bag carrots, slice diagonally
  • 1 red onion, chopped
  • 3/4 brown or white rice, cook set aside
  • 2 tomatoes (or 1/2 cup water)
  • salt and pepper (cayenne or black)
  • 1 Tbsp. olive oil

Directions
  1. Heat oil in a large pot over low flame.
  2. Saute onions in the oil, keeping flame low
  3. Add leeks and continue to saute for 5 minutes
  4. Add carrots
  5. Add tomatoes or water (I really prefer the tomatoes)
  6. Simmer with the lid on until the carrots are tender (20-30 minutes). Test with a fork - if it goes thru easily it is ready
  7. Turn off the heat and add the cooked rice. Stir all tog. Serve warm.
  8. PS- Of course leftovers can be served warmed up or cold. the leeks really make this salad delish.

Leeks are so delicious with the tomatoes and carrots
I opted for the cayenne pepper for that extra heat.
