How to make it

  • Peel and slice onions faily thick to make rings (I make them about 5mm thick)
  • Separate the rings a bit and add to crockpot. Top with olive oil and toss to coat.
  • Cook on low for about 3 1/2 hours, if possible stir once an hour.
  • Test for seasoning and add salt & pepper as necessary. Some people like to add a little acid at this point (lemon juice or vinegar) to balance the flavours, but I usually don't because I prefer to doctor them at the time of use.
  • Continue to cook uncovered for the last half hour to let any liquids evaporate. The onions should have a rich golden colour and silky texture.
  • Cool, then store in a sealed container. Enjoy!

    We use a lot of caramalized onions in our cooking as well. Great steak and burger toppers, I totally agree with you on that front. Love the fact you found a way to slow cook these without all the fuss over a hot stovetop. Great post. You have my 5.
