Crockpot Caramelized Onions

- 3 Lbs mixed onions, I use yellow, red & cippolini. shopping list
- 2T or so olive oil shopping list
- salt & pepper to taste shopping list
How to make it
- Peel and slice onions faily thick to make rings (I make them about 5mm thick)
- Separate the rings a bit and add to crockpot. Top with olive oil and toss to coat.
- Cook on low for about 3 1/2 hours, if possible stir once an hour.
- Test for seasoning and add salt & pepper as necessary. Some people like to add a little acid at this point (lemon juice or vinegar) to balance the flavours, but I usually don't because I prefer to doctor them at the time of use.
- Continue to cook uncovered for the last half hour to let any liquids evaporate. The onions should have a rich golden colour and silky texture.
- Cool, then store in a sealed container. Enjoy!
